Chicken Korma Recipe
Serves 4
- Heat 2 tbsp of oil in a pan and add 1 medium diced onion, fry until soft.
- Add 1 tsp finely chopped ginger, and 1/2 a jar of Patak's Korma spice paste, cook for 1-2 minutes. Add 50ml of water cook until the water has evaporated.
- Add 500g diced chicken, cook until sealed. Add 1 can / 400ml coconut milk, 50ml double cream and 1 tsp sugar; simmer uncovered until the chicken is cooked (approx. 15 minutes).
- Season to taste, garnish with fresh chopped coriander and serve with rice and naan.
For a thicker indulgent Korma, try adding 50g of creamed coconut with the double cream for that traditional Indian home cooking experience.
Patak's has been a family business for years, with the founder Kirit Patak taking over the family business.
His father and mother landed in Britain in 1956 with just £5 to their name. After living in Kenya and selling Indian sweets they made there, they wondered if the same business could help them succeed in Britain. So they started selling Indian sweets from their very own home, with their son Kirit soon making deliveries all across London. This grew into a small shop selling spice pastes preserved in oil to give the real taste of India to London folks.
When Kirit grew up, he took over from his father. It was his wife, Meena, who thought of producing sauces to make cooking simple for everyone. Cutting out the difficulty in preparing the perfect curry and having one ready to go! Thus, the Patak's business grew. Now they employ over 700 people worldwide and their sauces are beloved all across Britain!
