Tate & Lyle Light Brown Soft Sugar is the lighter version of the two brown caster sugars. With brown caster sugar, molasses are added back to the sugar at a later stage. In the light version that is simply done less than in the dark version. This creates a more subtle, softer, full flavor. A less dominant taste than the Dark Brown Soft Sugar. Even so, the light version also has the caramel-like taste and melts easily due to its moist properties.
